Ingredients:
- 4 oz dark chocolate
- 2 tablespoons unsalted butter
- 3 egg yolks
- 1/4 cup sugar, plus extra for dusting the ramekins
- 4 egg whites
- 1/4 cup Cacao Nibs Praline
- Cacao Flakes for topping
Instructions:
-
Preheat your oven to 190°C (375°F).
-
Grease four 6-ounce ramekins with butter and coat with sugar, tapping out any excess sugar.
-
Melt the chocolate and butter together in the microwave, stirring until smooth.
-
In a separate bowl, beat the egg yolks and sugar together until light and fluffy.
-
Add the chocolate mixture to the egg yolk mixture and stir until well combined.
-
In another bowl, beat the egg whites until stiff peaks form.
-
Gently fold the egg whites into the chocolate mixture, being careful not to deflate the egg whites.
-
Fold in the Cacao Nibs Praline.
-
Spoon the mixture into the prepared ramekins, filling them about 3/4 full.
-
Smooth the tops of the soufflés with a knife and sprinkle with Cacao Flakes.
-
Bake the soufflés for 15-18 minutes, or until puffed up and set.
-
Serve the soufflés immediately, as they will begin to deflate as they cool.
